the tradition of The King Cake

A long-established pastry tradition for the holiday of Epiphany is the Galette des Rois or King Cake. One story states that the church at that time viewed the galette as blessed bread to be shared with all people. Hidden in this delicious cake made of puff pastry and almond cream is a fève or lucky bean. The person who finds the fève is appointed King or Queen for the day.

This ritual is said to have started during the Roman times as a celebration in honor of the god Saturn. During this celebration, all the established rules were abandoned in favor of the rules made up by the King or Queen who was appointed by the bean in the galette.

In France, the tradition of the King designate survived. In many of the Provinces, the galette was cut in ritual ceremony, with many songs and parades of children savoring the offertory. At the time of the French Revolution, forces sympathetic to the revolution tried without success to substitute the gateau of Liberté et égalité for the King Cake.

Today the tradition of the Galette des Rois still exists in France. In the north of France and in the Lyon region the King Cake is made out of puff pastry and garnished with almond cream. The bean is replaced with a small porcelain toy. There are many traditions that surround the Galette des Rois. At Aux Petits Delices you will find the King Cake that favors the recipe of Northern Region of France, complete with its own special fève.
